Cover diced onions, celery and rice generously with water, cover and cook in microwave for around 10 minutes (rice should not be cooked). Put cubes in a large bowl, crumble in uncooked sausage and mix.

Add onion, celery and rice mix and enough water to moisten stuffing cubes. This is one of those "cook by looking" tricks. The stuffing cubes should be completely wet, but still be recognizable as cubes (the rice will soak up any excess liquid during roasting).

Stuff into body and neck cavities in your turkey and there is always a significant amount left over. Place remaining stuffing in another dish, cover and cook at least 1 1/2 hours (if desired, add broth or turkey giblets for additional flavor).
