hot chocolate

Ingredients:

* 1 can dry chocolate milk mix (3 cups)
* 1 eight-quart box instant dry milk (8 cups)
* 8 ounces powdered coffee creamer
* 2 ounces powdered sugar
* 2/3 cup cocoa

Mix ingredients all together, then separate into gift jars.

Serving instructions:

Mix approximately 1/3 cup into a mug of hot water.

As mentioned on a previous post, serving measurements are really according to taste, so it is pretty much up for you to do what you feel you need to in order to get the best cup of cocoa possible. When we drank cocoa, we liked ours thick. Oh so good!

Cafe Au lait mix in a jar (sugar and sugarfree variations)

Monday, September 10th, 2007

A word about all these mix in a jar drink types. We have found that all the serving sizes are pretty much to taste. Some prefer their mixes to approximate the sludge range, while others like just a vague hint that something other than hot water might be in there. So, generally, measurements are guidelines rather than requirements.

Instant Russian Tea Mix in a Jar

Friday, July 27th, 2007

Ingredients:

2 cups Tang
3/4 cup plain instant tea
1 cup sugar
1 tablespoon cinnamon
3 ounces instant lemonade mix
1/2 teaspoon cloves
1/2 teaspoon allspice

My grandmother used to make this and added Red Hot candies to the mix. I have also heard this called Friendship Tea.

Mix all ingredients together and store in a glass container with a tight fitting lid. Use two heaping teaspoons per teacup of hot water.

This is one of my very favorite gift mixes to make and keep on-hand. The last time I made this, I doubled the ingredients and filled multiple pint jars for holiday gifts. They worked out wonderfully and I have yet to meet someone that does not care for the flavor. I am, of course, biased, since this is one of my childhood comfort foods.

Of course, if you wanted to make Russian Tea fresh, without the plastic ingredients, you could do that. It tastes so wonderful.

Ingredients for fresh Russian tea:

6 cups cold water
1 cinnamon stick
6 whole cloves
4 black tea bags
1 cup orange juice
2 tablespoons lemon juice
1/4 cup sugar, more to taste
1/2 teaspoon freshly grated nutmeg

Bring water, cinnamon stick and cloves to a boil in a medium saucepan; remove from heat and add tea bags. Steep, covered, for 5 minutes. Discard the tea bags and whole spices.

In a small saucepan, heat orange juice, lemon juice, sugar and nutmeg. Warm until the sugar dissolves.

Add the juice mixture to the tea. Taste and add more sugar if desired. Reheat and serve.

Rose Petal and Lemon Tea

Thursday, July 19th, 2007

Ingredients:

* 2 cups black or Chinese tea, about 8 ounces
* 1-1/2 cups dried rose petals or buds (purchase them unsprayed - ask the vendor to provide)
* 3/4 cup lemon verbena leaves
* 2 tablespoons dried lemon peel

In a large bowl, mix together the tea, rosebuds, verbena leaves and lemon peel. Strong light will affect the delicate taste of the tea, so package in airtight containers and store away from the light.

Use 2 tablespoons per cup of tea. Rose tea should be made with a little honey or sugar to bring out the flavor of the rose.

Kattitudes recipes that we keep as favorites.

Many of these recipes are here because it is just too easy for me to use the computer in the kitchen as my cookbook. I just open my browser to the recipe I need and I am good to go with no paper fuss and no mess. And, if you have been to my house for dinner and ask for a recipe, this is where I put it.

Mix in a jar recipes

This collection is by no means extensive, but they sure make great gifts. These are wonderful to pull out when you need a memorable hostess gift or a great “get yourself well soup” gift. Be sure to store in a warm, dry location to avoid condensation and clumping of ingredients.
