Make your own marshmallow creme
I love making fudge for Christmas gifts (and I love watching my friends enjoy it), but I just hate using store bought Marshmallow Fluff. You know the stuff. In the jar. Fluff. It is so famous.
It is just the idea. Every time I look at it, I think to myself “melted plastic”. It just makes the obsessive in me a little queasy.
So knowing that I can now make my own marshmallows quite successfully, I wondered why on earth did I have to rely on the jar of melted plastic to make that wonderful Christmas fudge?
And thusly, homemade marshmallow creme began. This works just like Fluff in a jar. And all the ingredients can be found in your own cupboards, as opposed to a laboratory. It gives me a modicum of comfort about passing along all the fudge now.
Ingredients:
2 cups sifted confections sugar
1/2 teaspoon salt
3 egg whites
2 cups light corn syrup
1 tablespoon vanilla extract
In large bowl, combine egg whites, syrup and salt. Beat for 10 minutes until thick. At low speed, add confectioners sugar. Add vanilla extract and beat until blended. Makes two quarts.

Fi - I’ll be out most tomorrow, but will shoot you an email once I get home! Much easier recipe than condensed milk but honestly, the condensed milk tastes richer in my opinion. I make both types of recipes. In fact, I should start posting some more fudge recipes soon. Good reminder!

As it does not have preservatives and it does have eggs in it, I always keep it in the refrigerator religiously. As for how long it lasts, honestly, I am not sure. I always make it when I want to make fudge or when I have a party where I have an ice cream social planned. If there is anything left over, I make fudge with the remainder the next day. As a result, my creme has never gone beyond two or so days at the most. I will pull out my fluff fudge recipes and post them today. They are actually just the recipes from the back of the Fluff jar, but I use my homemade fluff rather than the plastic fluff instead. Oh, and as far as how to store it, I (going for the easy all the time) just keep it in the fridge in the mixing bowl, but a lot of that has to do with how quickly I always use it. Best of luck!

seriously this is a life saver, my small brained father went to the stor for marshmallow cream/fluf and came home with mini marshmallow.

Anyway, I’m super pregnant and on bed rest. DH is at work and I was craving the hell out of a PB and fluff sandwich. I don’t like using regular commercial fluff because of all the artificial ingredients, so this is a lifesaver!

Thanks for the recipe!! I make a chocolate marshmallow frosting that the kids LOVE and this will make me feel so much better about them eating it.
