Mix in a jar: Moroccan dry meat rub
This rub makes a fantastic kitchen gift for the holiday season. It’s a feisty spice mix that adds an incredible flavor to a cut of meat. Try some on lamb cooked with dried apricots and almonds for a taste that is out of this world.
Ingredients:
2 tablespoons paprika
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/2 teaspoon ground cumin
1/2 teaspoon ground fenugreek
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon cayenne
In a small bowl, stir together all of the ingredients. Store in a tightly covered container. Rub onto the meat or poultry and let stand 15 minutes or refrigerate up to four hours before grilling.
