Mix in a Jar: Beignets

If you have ever been near, around, heard of or tasted New Orleans, then you have tasted beignets. They are little Cajun doughnuts. Hot crispy squares of dough, they are absolutely covered in more powdered sugar than should be legal.

And surprising, beignets are remarkably easy to make. So many people, even down here in the heart of the South, buy the mix from the famous New Orleans establishment, Cafe du Monde. Now, you can save your friends the expense and create that wonderful flavor for them.

1 cup flour
1/2 cup sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt

Combine all and store in airtight container.

Attach a tag with the following instructions:

To one package beignet mix, add:
1/4 cup butter
3/4 cup water
3 teaspoons sugar
4 large eggs
oil for frying

In medium saucepan, combine butter, water and sugar. Bring mixture to a boil and remove pan from the heat. Add the beignet mix and beat with wooden spoon until the mixture leaves the sides of the pan.

Add the eggs, one at a time, and beat until the mixture is smooth.

Heat 4 inches of oil in a heavy 5-6 quart saucepan to 360º F. Drop the dough by tablespoonfuls into the oil, and cook about 3 minutes until each is puffed and golden.

Drain on paper towels and sift powdered sugar over each one.
