Moistest Banana Nut Bread
The sour cream does amazing things. Around here, we do not care for the flavor of baked nuts, so I usually replace nuts in our recipes with things like dried fruits and have even tried nut flour instead of nutmeats. I try to always keep in our pantry items like dried currents, dried cranberries, dried apricots, dried plums, and dried apricots. Sometimes a bit of fruit can work a miracle for a recipe.
Ingredients
- 2 bananas
- 3 tablespoons sour cream
- 1 3/4 cups sugar
- 1/2 cup melted butter
- 3 eggs
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- pinch salt
- 1/2 cup nutmeats
Mix ripened bananas, sugar and melted butter together. Add eggs, flour, baking soda and mix. Add vanilla, dash of salt, and sour cream. Add nuts if desired.
Grease and flour 2 loaf pans. Pour mixture evenly into the 2 loaf pans. Bake at 325 degrees for 55 minutes.
