Zuppa Toscana
We got a request for assistance in duplicating the Olive Garden soup - the Zuppa Toscana. Soups are so basic in their steps, that you will find, if you haven’t experimented enough yet, that the first few steps of this soup are pretty much the first few steps for just about all the recipes that you want to make. Start with moisture, then cook root veggies in spices, then add stock and your feature. It is the same template over and over.
12 links Italian sausage, sliced
2 medium potatoes, cut in half lengthwise then thinly sliced
3/4 cup chopped onion
6 slices bacon
1 1/2 tsp. minced garlic
2 cups kale, halved then sliced
2 tbsp. chicken base
1 quart water
1/3 cup heavy whipping cream
Brown sausage and set aside. In a large pan cook onions and bacon until onions are almost clear. Remove bacon and crumble. Add garlic to onions and cook 1 minute. Add chicken base, water and potatoes. Simmer, covered, 15 minutes. Add meats, kale and cream. Simmer 4 minute
