Ginger drop cookies in a jar

Just because the Christmas season is behind us, does not mean we should stop baking. Sometimes I think a lot of the world’s woes can be cured baking in a kitchen with a hot oven.
So the holiday season is finished and now we are in the (theoretically) the deep darkness of mid-winter…unless you live in Georgia, where it is ungodly too hot for me almost all the time. I want deep dark winter season topped with a little wind chill, if you please.
So - as I was saying - the winter bleahs have set in, and our tummies are still a little upset with what we put in there for a month. Folklore (and organic gardeners) tells us that ginger is good for upset stomachs and soothing to the digestion. Let’s put that to the test with ginger drop cookies.
- 3/4 cup shortening
- 3/4 cup sugar
- 1/2 cup molasses
- 1 egg
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- sugar
In a large mixing bowl, cream shortening and 3/4 cup sugar until light and fluffy. Add molasses and egg; beat well. In another bowl combine dry ingredients and mix with fork. Stir dry ingredients into creamed mixture, mixing well. Chill cookie dough for at least 2 hours (or feel free to leave overnight in the fridge if you run out of time). Shape into one inch balls, then roll in sugar (if you desire).
Please cookies on greased baking sheets and bake in preheated 375 degree oven for about 12 minutes.
If you need a gift these days, find yourself a fantastic jar with a funky design, fill it up with cookies and top it with a ribbon. I’m willing to bet that after the frenzy of Christmas is over, getting something simple and elegant would be well received! Get baking, peoples.

These cookies are so good. I made these for my co-workers and they did not last very long. I really enjoy your ideas and look forward to seeing what comes next.
