To begin, prepare the base of the tart squares. Mix together 1 cup flour, butter and powdered sugar. Press into a well-greased and floured 9x9 inch pan.

In a bowl, mix the lemon juice, grated lemon rind, granulated sugar, eggs, 2 tablespoons flour and baking powder. Mix and pour the topping over the crust. Bake 25 minutes at 350 degrees F in a preheated oven.

While warm, sprinkle with powdered sugar. Cut into squares when cool.

A couple of hints: I make these every Christmas, so I've started to experiment a little with the recipe. I have used fresh lemon juice to make this, but did not get a strong enough tart/lemon flavor to my liking, so I stick with regular lemon juice from the market.

Also - a lot of time my base crumbles, so I've started adding extra butter (just a smidge) and it usually works to keep it together. This year I think I am going to try a little cream cheese in the base incredients (just a little) to see if that will help with the crumbing (and add a little zing to the recipe too). I'll let you know how it goes.
